Before and after the meal, participants will have blood samples taken to measure IL-6 and MDA levels. They will also provide personal information, medical history, lifestyle habits, and dietary intake through interviews and questionnaires. Body Mass Index (BMI) will be calculated, and physical activity levels assessed. The study aims to capture the immediate effects of rice consumption on inflammation and oxidative stress markers in this population.

Eligibility Criteria
You may qualify if you...
- Healthy administrative employees
- Age between 21 and 59 years
- Body mass index (BMI) between 18.5 and 22.9 kg/m2
- Low physical activity level (600 MET minutes per week or less)
- Able and willing to provide informed consent
You will not qualify if you...
- Pregnant, breastfeeding, or menopausal women
- Use of herbal medicines or supplements within 24 hours before data collection
- History of diabetes mellitus, cardiovascular disease, cancer, or autoimmune disease
- Vegan diet
- Smoking or alcohol consumption
- Allergy to any ingredients in the research meal
