Who Can Participate
Eligibility Criteria
You may qualify if you...
- Male
- Chinese ethnicity
- Age between 21 to 45 years
- Body Mass Index (BMI) between 18.5 to 27.5 kg/m2
- English-literate
You will not qualify if you...
- Smoking
- Allergies or intolerances to common food ingredients including eggs, fish, milk, peanuts, tree nuts, shellfish, soya, wheat, pea, gluten, cereal, fruits, dairy products, meat, vegetable, sugar, sweetener, natural food colourings or flavourings
- Following special diets or having intentional dietary restrictions (e.g., vegetarians/vegans)
- Dislike towards plant-based or chicken-based foods
- Not willing to adhere to diet modification as per study instructions
- Not willing to stop strenuous activity during or within 24 hours of test days
- Glucose-6-phosphate dehydrogenase deficiency (G6PD deficiency)
- Alcohol consumption on more than 4 days per week with at least 6 alcoholic drinks per week
- Sustained elevated blood pressure (greater than 160/95 mm Hg)
- HbA1c reading 6.5% or higher
- Previous gastrointestinal surgery or history of gastrointestinal disorders
- History of heart, liver, kidney, blood disorders (e.g., thalassemia), or thyroid dysfunctions
- Diabetes
- History of tuberculosis, HIV, Hepatitis B or Hepatitis C infections
- Use of prescription medication, alternative medicines, or supplements that may interfere with study measurements
- Antibiotic use or diarrhoea within the last 4 weeks
- Blood donation within 4 weeks prior to participation
- Poor veins or history of severe vasovagal syncope from blood draws
- Employment at the Singapore Institute of Food and Biotechnology Innovation (SIFBI)
