Researchers are evaluating the effects of daily consumption of nutrient-fortified eggs compared to regular eggs on eczema in adults aged 21 to 59 in Singapore. The study aims to see if eating these eggs can improve eczema symptoms and related health markers. This is a double-blind, randomized study involving individuals with mild to moderate eczema who are otherwise healthy and have a normal body mass index. Participants will be randomly assigned to one of two groups: one consuming two regular eggs daily and the other consuming two nutrient-fortified eggs daily, both alongside their usual diet. Both groups receive personalized dietary counseling and written instructions from research dietitians and trained staff. The study lasts for 12 weeks, during which the participants follow their assigned egg consumption. Throughout the study, participants will undergo regular assessments at weeks 0, 3, 6, 9, and 12. These include skin evaluations using questionnaires such as the SCORAD Index, EASI scoring, and Dermatology Life Quality Index, as well as measurements of skin and blood carotenoid levels. Eye health is also assessed through various tests, and blood samples are collected to analyze inflammatory and metabolic biomarkers. The study monitors changes in skin, eye health, and other biological markers to understand the impact of the eggs on eczema and overall health.
