What this Trial Is About
The purpose of this study is to see how a diet that mimics fasting effects inflammation in patients with mild to moderate Ulcerative Colitis (UC). The diet may allow users to receive the benefits of fasting while also being able to enjoy food (the ingredients of which are GRAS (generally recognized as safe) by the Food and Drug Administration (FDA). Research on dietary interventions and UC are very limited. Fasting mimicking diets (FMD) have been studied with support of the National Institute of Health and published in leading journals. This research investigates whether markers of inflammation decrease and/or quality of life increases after three cycles of a five-day period of the fasting mimicking diet, and may provide rationale for its use to treat UC.

Who Can Participate
Eligibility Criteria
You may qualify if you...
- Mild to moderate Ulcerative Colitis with a partial Mayo score between 2 and 7
- Age between 18 and 70 years at the start of the study
You will not qualify if you...
- Women who are pregnant, nursing, or expecting to become pregnant
- Allergy to nuts
- Body mass index (BMI) less than 18
- Serious medical conditions unless approved by a physician
- Severely weakened by disease or medical procedure
- Taking medications unsafe with calorie-restricted diets
- Diabetes treated with anti-diabetic drugs that risk hypoglycemia
- More than mild-moderate cardiovascular disease or life-threatening cancer unless approved by a physician
- History of severe cardiac disease such as uncompensated congestive heart failure (NYHA grade 2 or more) or left ventricular ejection fraction less than 40%
- History of syncope
- Dietary needs incompatible with the fasting mimicking diet
- Liver or kidney disorders affected by low glucose and protein diet
- Currently on a caloric restricted diet
- Prior gastrointestinal surgery causing issues like short bowel syndrome, ostomy, hemi- or total colectomy, proctocolectomy, or ileoanal pouch
