The primary outcome is total GLP-1 secretion measured from baseline through 180 minutes post-consumption. Secondary outcomes include satiety scores, blood glucose, and insulin levels. The trial, sponsored by Purdue University, plans to enroll healthy adults and will last until November 2026.

Eligibility Criteria
You may qualify if you...
- Healthy adults aged 18 to 45 years
- Body mass index (BMI) between 18.5 and 24.9 kg/m2
- Able to read and speak English
- Fasting blood glucose levels less than or equal to 100 mg/dL
- HbA1c less than or equal to 5.7%
- Men and women
You will not qualify if you...
- Age less than 18 or greater than 45 years
- BMI less than 18.5 or greater than 24.9 kg/m2
- Diabetes diagnosis
- History of gastrointestinal disease
- Pregnant or nursing women
- Taking GLP-1 medications, following weight-loss diets, or restrictive eating patterns
- Dairy or gluten intolerance or allergies
