This research aims to examine how participation in community gardens affects fruit and vegetable intake and access to healthy food among adults aged 18 to 95 living in low-resource communities. Participants will be randomly assigned to one of seven community gardens. The other three gardens form a control group asked to abstain from these activities during the initial 8 weeks but will receive the same intervention one month later. Participants will complete surveys at baseline, after 8 weeks (end of intervention), and at 6 months post-intervention. These surveys measure fruit and vegetable intake, access to healthy foods, food security, physical activity, life satisfaction, stress, community engagement, and gardening and cooking knowledge. The study involves volunteering in the garden, participating in social and cooking activities, and completing questionnaires to understand the intervention's impact over time.

Eligibility Criteria
You may qualify if you...
- Arkansas resident aged 18-95
- Live in community within 1 mile radius of a participating garden
- Speak English
- Willingness to participate in the garden as a volunteer during the study intervention period
- Not previously participated in the garden as a volunteer in past 6 months
- Scores as food insecure on any food security measure
- Written informed consent
- Have working phone, home address, and email
- Willingness to complete all survey assessments

Duration - 8 weeks
Participants assigned to community gardens will engage in an 8-week intervention including volunteering in the garden, participating in garden social activities, healthy cooking demonstrations, educational sessions, and receiving educational materials. Control group participants will abstain during this period and receive the delayed intervention one month later.
Surveys at baseline, 8 weeks, and 6 months post intervention
