What this Trial Is About
Researchers are studying childhood obesity, focusing on Hispanic families in rural Arkansas. The study aims to develop and test a culturally tailored healthy eating program called Growing Healthy Children and Families in Rural Arkansas. This program seeks to improve diet quality and cooking habits among mothers and increase fruit and vegetable intake in children. The study compares results between an intervention group and a control group to assess effectiveness and acceptability. The intervention involves seven culturally adapted healthy eating modules delivered at home by trained Community Health Workers (CHWs) over 14 weeks. Mothers in the intervention group also attend two to three cooking demonstration workshops held in church settings. The control group receives seven bi-weekly educational videos on various health topics unrelated to diet, delivered via Facebook or WhatsApp over 12 weeks. Participants will engage in cooking workshops, one-on-one learning activities, and report on diet and physical activity. Researchers will measure changes in dietary behaviors, diet quality using questionnaires and cooking quality assessments, plus children's fruit and vegetable intake using specialized tools at the start and end of the study. The total participation period includes baseline and follow-up assessments around week 22, with ongoing monitoring of physical activity and sugary drink consumption.
