What this Trial Is About

This research aims to improve healthy food access and nutrition among rural residents at risk of food insecurity in eastern North Carolina. The study evaluates the impact of providing vouchers to patrons of the Ripe for Revival mobile market, a non-profit initiative offering discounted fresh produce and other foods. The project focuses on promoting balanced diets to prevent chronic disease and supporting sustainable local agriculture in eight rural counties. Participants who are part of North Carolina Cooperative Extension programs and at risk of food insecurity will receive monthly $20 vouchers for three months to use at the mobile market. The mobile market operates weekly, selling fresh produce, eggs, meat, and milk at discounted prices. Data collection occurs at baseline, around 4 weeks, 8 weeks, and between 12 to 16 weeks, with measurements including skin carotenoid scans to assess fruit and vegetable intake. During the study, researchers will collect data on participants' diet, weight, blood pressure, food and nutrition security, voucher usage, and satisfaction with the mobile market. Assessments include surveys and physical measurements taken at the NC Cooperative Extension office. The total study duration for each participant spans approximately 12 to 16 weeks, allowing evaluation of nutritional impacts and program effectiveness in improving healthy food access.
